Chicken and shiitake mushroom rice

A Wenzhou-inspired one-pot rice dish, where browned chicken and dried shiitakes infuse every grain with their umami flavor. The golden crust at the bottom of the pot is the signature of an attentive cook.

Ingredients

  • 600 g Skin-on chicken thighs
  • 80 g Dried shiitake mushrooms
  • 400 g Jasmine rice
  • 30 g Fresh ginger
  • 2 pieces Scallion
  • 3 tbsp Light soy sauce
  • 1 tbsp Dark soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tsp Brown sugar
  • 1 tbsp Toasted sesame oil
  • 2 tbsp Sunflower oil
  • 1 pinch Ground white pepper
  • 1 pinch Salt
  • 500 ml Water

Method

  1. Rinse the rice in cold water, gently massaging the grains until the water runs almost clear, then let soak in cold water.
  2. Soak the dried shiitake mushrooms in warm water until they are pliable and meaty to the touch, then strain the soaking liquid through a fine-mesh sieve and set aside carefully.
  3. Cut the chicken thighs into medium pieces, keeping the skin on, then toss with the light soy sauce, dark soy sauce, Shaoxing wine, brown sugar, and white pepper; let marinate.
  4. Slice the rehydrated mushrooms into thick strips, finely chop the peeled ginger, and thinly slice the scallion into rings.
  5. Heat the sunflower oil in a Dutch oven, then brown the marinated chicken pieces skin-side down first until they reach a beautiful crispy golden color.
  6. Add the chopped ginger and sliced mushrooms to the pot, and sauté until a toasted, woody aroma emerges.
  7. Drain the soaked rice and add it to the pot, stirring gently to coat every grain in the fat and cooking juices.
  8. Pour in the mushroom soaking liquid, then top off with enough water to cover the rice by barely one knuckle, salt lightly, and bring to a boil over high heat.
  9. Cover tightly, reduce the heat to the lowest setting, and simmer without lifting the lid until the liquid is fully absorbed and small craters form on the surface of the rice.
  10. Off the heat, let rest covered so the moisture distributes evenly, then fluff the rice with a fork, sprinkle with the sliced scallion, and drizzle with toasted sesame oil.
