Chili oil wontons (chao shou)

Discover authentic Chao Shou, delicate Sichuan wontons bathed in a spicy, sweet, and vinegary red sauce. A Chinese street classic, both comforting and vibrant with flavors.

Ingredients

  • 1 piece Wonton wrappers
  • 300 g Ground pork
  • 1 bunch Scallion
  • 20 g Fresh ginger
  • 2 cloves Garlic
  • 4 tbsp Light soy sauce
  • 1 tbsp Dark soy sauce
  • 1 tbsp Shaoxing wine
  • 2 tbsp Black rice vinegar
  • 1 tsp Brown sugar
  • 2 tbsp Toasted sesame oil
  • 100 ml Water
  • 4 tbsp Sichuan chili oil
  • 1 tbsp Toasted sesame seeds
  • 3 tbsp Sichuan chili flakes
  • 150 ml Neutral oil (grapeseed)
  • 1 pinch Five-spice powder

Method

  1. Prepare the filling: finely chop the scallion and ginger. In a bowl, mix the ground pork with the ginger, some of the scallion, Shaoxing wine, light soy sauce, and sesame oil. Gradually stir in the water, stirring in the same direction for a few moments until the meat becomes sticky and absorbs the liquid.
  2. Shape the wontons: place some filling in the center of each square wrapper. Lightly moisten the edges, fold into a triangle, then bring the bottom corners towards each other, overlapping and pressing them to seal. Set aside on a floured tray.
  3. Prepare the signature sauce: peel and finely mince the garlic. At the bottom of the serving bowls, arrange the minced garlic, remaining light soy sauce, dark soy sauce, black rice vinegar, brown sugar, and Sichuan chili oil. Stir so the sugar begins to melt.
  4. Cook the wontons: bring a large pot of water to a boil. Gently plunge the wontons in and stir gently to prevent them from sticking to the bottom. Simmer for a few minutes until they float to the surface and the wrapper is translucent and tender.
  5. Finish the sauce: ladle out some hot cooking water and whisk it into the bowls containing the sauce to dilute and warm it. This will create a smooth and fragrant sauce base.
  6. Plate: using a slotted spoon, divide the cooked wontons among the prepared bowls. Drizzle generously with the spicy sauce.
  7. Garnish and serve: sprinkle the wontons with the remaining sliced scallion and toasted sesame seeds. Serve immediately to enjoy the contrast between the melting wrapper and the spicy sauce.
