Common whelk
The scavenger of the sand, and we eat it with mayonnaise.

- Start in cold aromatic water, then 15 to 20 minutes from the boil depending on size
- Let it cool in its broth, or the meat shrinks and toughens

- In French
- Bulot
- Scientific name
- Buccinum undatum
- In the water
- Sand and gravel bottoms of the North Atlantic and the Channel, from 5 to 200 metres.
- Season & buying
- Fished all year, best from September to April.
- Common length
- ~7.5 cm
- How to identify it
- Tall conical shell with seven clear whorls
Regular spiral ribs on every whorl
Wide oval aperture with a flared lip
On the plate
Firm briny meat, frankly marine, rubbery if overcooked.
Avoid: Long cooking turns it to rubber. Past 25 minutes it is beyond saving.
It finds a wounded prey from more than thirty metres away with a siphon it raises like a periscope, then sometimes spends two days drilling through a mussel shell with its rasping tongue.
