Homemade mint lemonade

A bright and refreshing homemade lemonade, balanced between the acidity of lemon, the freshness of mint, and a light sweetness. Perfect very cold for a summer snack or an alcohol-free aperitif.

Ingredients

  • 5 pieces organic lemons
  • 1 l still water
  • 80 g granulated sugar
  • 0.5 bunches fresh mint
  • 200 g ice cubes

Method

  1. Rinse the lemons and mint under cold water, then gently dry the leaves to keep their aroma clean.
  2. Roll the lemons on the counter with your palm until they become slightly soft to the touch.
  3. Warm a small portion of the water with the sugar in a saucepan, stirring until you have a clear liquid with no grains at the bottom.
  4. Off the heat, add some of the mint, lightly bruised between your fingers, and let steep until the smell is distinctly minty but still sweet.
  5. Squeeze the lemons, then strain the juice to remove the seeds and excess pulp if you want a smoother lemonade.
  6. Pour the lemon juice into a pitcher, add the strained mint syrup, then top with the remaining very cold water.
  7. Stir thoroughly with a spoon, taste, then adjust with a little water if the acidity seems too sharp, or a few bruised mint leaves if the flavor lacks freshness.
  8. Refrigerate until the pitcher is very cold to the touch, then serve with the ice cubes and the remaining fresh mint.
