
A bright, fragrant homemade iced tea, where the roundness of black tea meets the tropical acidity of passion fruit. Served well chilled, it is a refreshing and elegant summer drink.
Ingredients
- 1000 ml water
- 4 pieces black tea bags
- 6 pieces passion fruits
- 50 g light cane sugar
- 1 piece lime
- 8 leaves fresh mint leaves
- 400 g ice cubes
Method
- Bring the water to a simmer, then remove from the heat as soon as fine bubbles appear, without letting it come to a rolling boil.
- Steep the black tea until the color is amber and the aroma is pronounced, then remove the bags without pressing them to avoid bitterness.
- Add the cane sugar to the still-hot tea and stir until completely dissolved; the liquid should become clear and shiny.
- Let cool to room temperature, then refrigerate until the tea is very cold to the touch.
- Cut the passion fruits, scoop out the pulp with the seeds, and mix it into the cold tea to keep its fresh, tart aroma.
- Squeeze the lime, add its juice gradually, and taste: the balance should be bright, fruity, and refreshing, without overpowering the passion fruit.
- Fill the glasses with ice cubes, pour the iced tea over them, and stir gently to distribute the pulp.
- Lightly bruise the mint between your fingers to release its aroma, then add it right before serving.
