In French
Grenadier de roche
Scientific name
Coryphaenoides rupestris
In the water
A deep-sea fish of the North Atlantic, between 400 and 1,200 metres, over continental slopes and muddy plains.
Season & buying
Landed year-round, but the stock is fragile: check the origin and favour certified catches.
Common length
~60 cm
How to identify it
Bulbous snout and large dark eye
Two very uneven dorsal fins
Body tapering into a whip, with no tail fin at all

On the plate

White, fine, lean flesh with a mild flavour that carries a sauce well.

Avoid: Long cooking, which dries it out immediately.

It has no caudal fin whatsoever. The body simply narrows until it is a thread, and that thread is what drives it forward.
