No-fold rice paper shrimp dumplings

Inspired by no-fold dumplings: chopped shrimp, cabbage, carrot, crispy-chewy rice paper, soy-lime sauce. Very high in protein, very light.

Ingredients

  • 450 g raw peeled shrimp
  • 6 grandes rice paper sheets
  • 300 g shredded Napa cabbage
  • 1 grated carrot
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 1 clove garlic
  • 1 tsp sesame oil
  • 1 lime

Method

  1. Coarsely chop the shrimp with the garlic, ginger, soy sauce, and sesame oil.
  2. Mix with the cabbage and carrot.
  3. Soften the rice paper, cut into pieces, and mix into the filling to create sticky edges.
  4. Form 9 thick patties and cook in a nonstick skillet for 3-4 min per side.
  5. Reheat in a skillet or air fryer to get the crunch back.
